Eating a balanced meal and enjoying our food is very important to me, and I have talked before about how we like to sit down as a family at the table for a meal as often as we can.
Family meals can be very hectic in particular as it always feels like such a rush after a busy day, especially now we are all at home, so we try to have some idea of what we are going to cook each night. We want to have a simple balanced meal that doesn’t take an age to make. Meals obviously have to be kid-friendly too – our daughter is pretty good at trying new things now, but she certainly has her favourites and when she’s particularly tired and grumpy, she isn’t often willing to try something new.
We tend to cook with lean pork, beef or lamb a few times a week — it is really tasty, and provides us with a natural source of vitamin B12 Did you know that vitamin B12 is typically only found naturally in foods from animal products, such as meat, fish, eggs and dairy products? As adults, we need around 1.5 micrograms of vitamin B12 a day. Pork is a source of vitamin B12, vitamin B6 and zinc which can help the immune system to work normally.
We cook with pork a lot, as it is really versatile with a variety of cuts available, and you can make so many quick, tasty and balanced meals with it, whilst getting essential vitamins and minerals we need to help support our health and wellbeing. We eat pork in lots of different ways, from pork burgers with mince to belly pork and a full roast pork on a Sunday, with crispy crackling (although this is a lot less lean of course)!
Lean pork is a naturally rich source of vitamin B12;
Not only can some cuts of pork be lean, but it’s naturally rich in protein, low in salt and provides ten vitamins and minerals that contribute towards good health and wellbeing. These are: thiamin (vitamin B1), niacin (vitamin B3), vitamins B6 and B12, riboflavin, zinc, potassium, phosphorus, selenium and pantothenic acid.
These Greek-style pork kebabs make a delicious family meal that’s perfect for midweek cooking when you’re worn out and don’t have loads have time. Kids love to get involved with piling up their own wraps, and I always find that my daughter eats more when we have a meal like this that she can help herself to and we all love to dig in and help ourselves.
Most of the ingredients are things you’ll probably often have in your fridge and cupboards, you can substitute in any number of vegetables to grill with the pork and you can make quite a bit of it ahead of time, which is always a bonus!
You can either buy tzatziki or make it yourself if you have the ingredients and time, or you could always just use creme fraiche or natural yoghurt with a squeeze of lemon as your sauce.
The crunchy lettuce works really well in the wraps, but you could also use rocket or spinach or whatever you have!
